Rebel Restaurant is making a comeback in Denver — sort of


Over the course of its three-year run out of a spartan former biker bar, Rebel Restaurant received not one but two three-star reviews from The Denver Post.

Owners and chefs Bo Porytko and Dan Lasiy changed their menu often but became known for pierogies and whole hog’s head dinners, among other offbeat plates.

So when news came that the subversive — in style and substance — spot at the edge of RiNo was closing last August, fans were understandably heartbroken. Since then, the chefs have popped up once or twice at a one-off event or dinner.

But now, Porytko has announced he’s opening a new, smaller space across town on East Colfax. Coming Dec. 4, Misfit Snackbar will open inside Middleman bar at Colfax and Cook Street.

The newer Middleman (next door to Q House) has been serving New Mexican food out of a small kitchen and walk-up window since its opening in 2018, but Misfit will soon take over the bar’s food service window.

Once Porytko takes over Middleman’s kitchen, he’ll start making Caesar salad popcorn, kimchi croquettes and samosa-stuffed chile rellenos, along with sandwiches, “bites” and snacks.

He says Misfit’s menu will “pay homage to the customary over-the-counter snacks — i.e. popcorn, jerky, pickles — you find at the diviest of drinking holes, but turning them on their head with a modern gastronomical approach.”

The chef will also team up with the bartenders at Middleman, who make easy-drinking cocktails, to host some food-forward events. Bottom line: Whether we’re going to Rebel or Misfit or Middleman for some of Porytko’s singular creations, sign us up.
